Western's Zombie Chopper strips a Harley-style cruiser down to frame, engine and attitude. It appears in GTA 6's second trailer, following runs in GTA IV and GTA Online. A datamined 225 kg makes it light for a chopper, though the riding position will still do your spine no favors.

Rockstar has not confirmed how the Zombie Chopper is acquired. Custom bikes in past games came from bike shops, websites and biker-heavy neighborhoods, so expect one of those routes. Nothing official has been shared yet.
It was confirmed for GTA 6 through its Trailer 2 appearance.
