Spoonbill here is the roseate spoonbill, Platalea ajaja, a wading bird known for its pink feathers and a broad, flat bill shaped like a spoon. It sweeps that bill side to side through shallow water to filter out small fish and crustaceans. Its color actually comes from its diet, the same carotenoid pigments that turn flamingos pink, and the species was hunted hard for its feathers in the past before recovering. Coastal wetlands and shallow lagoons are exactly where it feeds in real Florida, which makes it a natural match for Leonida's own wetland stretches. It appears in GTA 6 trailer footage, so its inclusion is confirmed. What it does when a player is nearby, or whether it can be hunted or only watched, is not something Rockstar has said.
