Zach is a name attached to GTA 6 in leak discussion and casting related material, not in anything Rockstar has released. Rockstar's own confirmed cast for the game still runs to exactly two people, Jason Duval and Lucia Caminos, with everyone else on screen so far left unnamed by the studio itself. That gap between a two person confirmed cast and a much longer list of names circulating online is normal this far from launch. Casting notices and early leaks tend to surface long before a studio is ready to confirm anything, and the names inside them describe a role being filled rather than a finished, credited character. For Zach to move from rumor to fact, Rockstar would need to use the name itself, in a trailer, in its own character material, or in the game's eventual credits. Until then, it stays a leak sourced guess rather than a confirmed part of GTA 6.
